Cake without oil, baking powder

Recipe: Rice flour 1 glass, organic atta/refined wheat flour 1 glass, 1/2 glass powdered sugar, milk 1 glass, water 2 glass - are made to a smooth batter. You can use stainer to further smoothen the mixture. Then it is made to 2 parts, one part is mixed with food colour.

Now, take a steamer/or any other suitable utensil, fill water, place a cake container on the water with the help of any stand/base (steel). Brush the inside of the container with oil or ghee. Then put some amount of prepared mixture (without colour) in the container, keep the lid. Keep it for 2-3 minute, it will get cooked within that time. Then add the coloured mixture, put the lid on. This way you can add as many layers you want. Keep it for at least 2 minute after adding each layer. Once all laters are laid, keep it for 7-8 minutes. You can turn off the flame. Once it is cool, add whipped cream and your cake is ready.

Detoxed water from Miracle Leaves

 The medicated detoxed water from the miracle leaf(dupor bon, pategoja) - grown in the balcony. 

Common Name: Air Plant, Life Plant, Miracle Leaf, Cathedral Bells, Goethe Plant.

Scientific Name: Bryophyllum pinnatum / Kalanchoe pinnatum.

Family: Crassulaceae


Recipe:

A few miracle leaves are ground, then mixed with black salt, ginger, tulsi leaves to make it a nice paste. Then it is filtered using a stainer. With few drops of lemon and honey as per taste makes it our awaited detoxed juice.

Mango Cake with chocolate layer

I live in Bangalore, India. The mango season is almost coming to an end here and you will hardly get good quality mango from now onwards. I kept a mango aside for some time thinking that I would try something new in my cake experiments :-).

Ingredients are refined wheat flour - One and half coffee cup, ripe mango cubes - almost a bowl, sugar - half cup, cocoa powder - 2 table spoon, mango custard powder - 1 table spoon, dark chocolate - 7/8 blocks, curd - half bowl, 2 eggs, vanilla essence - 2 tsp, baking powder - 1 tsp and baking soda - half tsp.

In a bowl, firstly the refined oil and the sugar are whisked and then eggs are added and whisked again. Then curd is added. Now when these ingredients are ready, the refined wheat flour is added. The grinded mango is added. Whisking continues and vanilla essence is added. Then mixed the baking powder and baking soda. The batter is almost ready.

In a cake tin, one tsp of oil is brushed uniformly over the inner surface. A little bit of flour is sprinkled over it - so that the cake can be removed easily once it is baked.

The batter is divided into 3 parts. One part is added to the cake container now. A thin layer is made by mixing cocoa powder and batter. This layer is added on top of the first layer. The third layer is made of the custard powder and the remaining batter. These constitutes the 3 layers of different colour and feel.

Now the cake tin is gently tapped to settle the mixture. It is then kept in a pre heated(180 degree) oven for 30 minutes.

After the cake is baked, the melted chocolate is laid on top and a little bit of sprinkles are also added. Let the cake settles for 30 minutes.

Payas with jaggery and honey

Payas, perhaps the most loved dessert of India, is so easy to prepare. Where there are different ways to prepare the same, I too tried little differently. It came out really well.

Coming to the ingredients used, the payas was prepared for 4 people. A very unique rice available in Assam is used for the purpose, it is called Kon Joha(of Divine Harvest), which I got from Axom Haat here in Bangalore. Three and a half handful of rice, 800 ml milk, crushed cardamom 3 pieces, six-seven saffron strings for garnishing, one table spoon of desi ghee, organic jaggery powder for sweeten the kheer - 4 table spoon to my taste and one table spoon of honey have been used. Two small bay leaves are also used. Cashew and raisin are another two ingredients.

Now, let's see how to prepare the payas. Firstly, boil the milk. Once boiled, keep it in low flame. Now the crushed cardamom and bay leaves are added. Then rice is added and steered after every three or four minutes. After almost half an hour, when the rice is almost 70% cooked, jaggery and honey are added. This may vary person to person based on their taste. Let the whole thing mixed uniformly. Cashew and raisins are added. After a while, the rice is cooked completely. At this point, turn off the flame and ghee, saffrons are added for garnishing. Payas is ready to be served.

Mishti Dahi | A modified version | Lockdown recipe

Suddenly, mishti dahi has become one of my favourites when it comes to deserts or any other time pass food! I have bought from local stores - a good number of mishti dahi bowels, but the appetite was still growing strong day by day. I realised that it would be good it that can be prepared at home without any preservatives. More importantly, the kid started considering it as a regular side dish. So, I started giving it a thought and tried to find suitable methods to prepare it. It was my first attempt, but it was diligently done and to all my excitement, it came out as a winner! Let me share the recipe with you so that you can share it with your near and dear ones. 

Ingredients required are milk half litre (full fat milk), sugar(4 table spoon for caramelising and 2 table spoon for sweetening), Kesar(strings half tsp), cardamom power(1/4th tsp), plain yogurt (3 tbsp).

Mishti Dahi
Milk is thickened by heating in low to medium flame for ten to fifteen minutes. As per taste, sugar is added. In another container, sugar is caramelised. Now both caramelised sugar and thickened milk are mixed with cardamom powder and kesar. After a good mix is done, the item is brought to temperature which can just be touched - warm. The plain yogurt is whisked and mixed with the warm milk. The whole mixture is now kept in an earthen pot or a clay pot or any steel pot covered with steel foil or air tight cover. Steam can be applied on the container for 10-15 minutes. Then it should be kept to settle for around eight hours. When it is set, it can be put in refrigerator for two to three hours. 

Please note that in winter, the curd may take upto 24 hours to get settle.

Khorisa | Bamboo shoot | Old Indian Kitchen


One of my most favorite aroma based lists of foods, bamboo shoot is really close to my heart. From the childhood, I remember mom cooking so called khorisa or baah gaaj quite often, it actually sits in the traditional thali of Assam. The flavor it produced is so different, so natural by its own. In fact, bamboo shoot is consumed in different parts of India - it is known by different local names. Apart from India, in many countries of Asia also, it is consumed.

Raw bamboo shoot contains natural toxins, which need to be destroyed by boiling and through the process of cooking. The toxin also gets destroyed in the process of canning.

The outer fibrous layer of the young bamboo shoots are stripped off first. The inner little bit of creamy white core is crushed or grated and then it is kept in a sterilized pot. After closing pot, it is left to ferment naturally for a week or so. Once fermented, the pulp is separated and excess water is squeezed out. Now, this fermented pulp is stored in a container for a year or even more, it is popularly known as poka khorisa. Many people dry it under the sun too. It is often used to make pickle by mixing salt, mustard oil and ghost chilies(found in Assam).

I am one of those who are inventing and recharging new dishes from the common natural ingredients.Today I am going to share this recipe "Mustard Sauce". it is a very easy recipe with a great amazing taste with a very nice color.


Mustard sauce or Mustard chutney from Old Indian Kitchen


Ingredients you need for this recipe:

  • Organic Mustard seeds 3 to 4 tbsp.
  • Chili 1 or 2.
  • Garlic 5 to 6 pieces.
  • Turmeric powder 1/3 tbsp
  • Salt 1/3 tbsp
  • Sugar 1/3 tbsp
  • Squeezed fresh lemon 2 tbs
  • Mustard oil 3 tbsp.

Recipe:






  1. Take one small size grind jar.
  2. Add the Mustard seeds.
  3. Add the chillies.
  4. Add the garlic pieces
  5. Add the salt and sugar
  6. Add turmeric powder.
  7. Now add 3 tbsp of water
  8. Grind them well and stir with a spoon.
  9. Grind until its become smooth.
  10. Take out in a bowl.
  11. Apply 2 tbsp of squeezed lemon on the paste and mix them well.
  12. Heat 3 tbsp of mustard oil in pan and apply to the mustard paste.
  13. You can keep this chutney or sauce in refrigerator 5 to 6 days.
  14. Serve this sauce with smoked fish or any hot snacks or any steam food items.

So today, I am bringing a new variant of egg recipe to you i.e; Steamed Egg Chilli recipe. It is best for party starter, hope you will enjoy.

Ingredients:

  • Eggs 3
  • Onion medium size 1
  • Capsicum slices 1 handful
  • Soya sauce 2 tbsp
  • Tomato sauce 1 tbsp
  • Cornflour 2 tbsp
  • Salt
  • Oil 

Recipe:

  1. First we have to prepare the steamed egg.
  2. For making steamed egg, you have to beat three eggs in a bowl.
  3. Mix the white parts and yellow parts properly.
  4. Now apply oil in the bottom of a plain small bowl.
  5. Put the egg liquids inside the bowl.
  6. Place the bowl inside a cooker, add one cup of water in the bottom.
  7. Allow 5 whistle to make the steamed egg.
  8. Once cooker releases its heat, take out the steamed egg and make small pieces of your choice.

  10. Marinate the egg pieces with soya sauce 1/2 tbsp, 2 tbsp of cornflour, salt and water.
  11. Heat 2 tbsp of oil in a pan and fry all for 2 minutes.
  12. Take out in a bowl.
  13. Add capsicum slices, onion slices in the same oil.
  14. Fry them well.
  15. Add the remaining soya sauce and 1 tbsp of tomato sauce.
  16. Mix them well.
  17. Add the fried eggs and salt.
  18. Allow them o cook for 5 minutes.
  19. Now your beautiful dish is ready .
  20. Serve it warm with bread/ ban.

Today we are going to make one unique delicious fish starter. It is a quite simple one, I guess you will love it because its really very  yummy and a very nice smoked flavor will make you crazy.

Ingredients:

  • Fish pieces 2.
  • Olive oil/ vegetable oil 1 tbsp.
  • Salt.
  • Chat masala 1/3 tbsp.
  • Pepper powder 1/3 tbsp.
  • Squeezed lemon juice 1 tbsp
  • A good roaster to roast.

Recipe:

  1. Wash and clean the fish pieces.
  2. Remove the extra water using kitchen tissue.
  3. Apply oil, chat masala, pepper powder, lemon juice and salt one by one.
  4. Keep them for 15 minutes.
  5. After 15 minutes, marinated fish is perfectly ready to roast.
  6. Turn on the gas stove.
  7. Put the roaster.
  8. Once roaster is heated perfectly, you can add the fish pieces on it.
  9. Control the gas stove such a way that fish will cook perfectly without burn.
  10. Meanwhile turn back the pieces.
  11. Within 10 minutes, roasted fish will ready for eat.
  12. Serve it warm with a chutney of your choice.

Summer Chicken recipe - One less spicy chicken gravy - Old Indian Kitchen

How to make a simple, light chicken gravy for summer time - Old Indian Kitchen



Hello everyone, welcome back to your kitchen.


Summer is nearly here at your door. In this season, people love to  have light less spicy food. So I am bringing a very simple chicken gravy recipe to you. I believe that it is one of the best summer non veg recipe and hope it will make your summer happy happy.


Chicken with curd


Ingredients:

  • Fresh chicken pieces 500 grams.
  • Onion slices (2 onion)
  • Chopped tomato 1
  • Chili 2
  • Curd without water 30 grams.
  • Whole garam masala (cloves 2, cardamom 2, cinnamon 1 inch).
  • Gram masala powder 1 tbsp.
  • Cumin powder 1 tbsp.
  • Fried cashew pieces 1 tbsp.
  • Oil 3 tbsp
  • Turmeric 1/2 tbsp
  • Salt
  • Sugar 1/3 tbsp.

Recipe:

  1. Heat oil in the cooking pan.
  2. Simmer the gas.
  3. First add the whole garam masala.
  4. Once they starts cracking.
  5. Add onion slices.
  6. Fry them well .
  7. Add chopped tomatoes.
  8. Add turmeric powder.
  9. Fry and mix all together.
  10. Now add the chicken pieces.
  11. Fry them well and cover them for 3 to 4 minutes.
  12. After that add cumin powder and again saute them well.
  13. Add 3 tbsp of curd without water.
  14. Add sugar and salt.
  15. Allow the dish to be cooked in simmer for 10 minutes.
  16. After that, add the remaining curds to the dish.
  17. Add 1 cup of warm water.
  18. Cut the chilies above the dish.
  19. Allow the dish to be boiled for 10 minutes.
  20. Mix them well.
  21. Check the salt once and turn off the heat.
  22. Mix 1 tbsp of garam masala.
  23. Garnish the dish with fried cashew.
  24. Serve it warm with chapati or steam rice.
